It's not the prettiest fish in the sea, but it's underappreciated – it's related to turbot and brill. They're also known as Cornish Sole, and they're great value for money, eat well, and are, above all, sustainable. Although the flavour is not as delicate as that of a Lemon or Dover, it can be cooked in the same manner.
One whole fish (approximately between 300g - 350g kg) choose between oven ready whole fish or fish fillets. We suggest a 300g - 350g portion (one Megrim Sole) as standard per person.

Fish Preparation Guide
Fillets are the most commonly used cut. The fish is taken off the bone to create a fillet which is then pin-boned. Fillets cut from larger fish can subsequently be cut into portions also known as Supremes.
Types of Fish: Cod Brill, Dabs, Dover sole, Gurnards, Herring, Lemon Sole, Megrim Sole, Monkfish, Plaice, Pollock, Rainbow, Trout, Salmon, Sardines, Sea Bass and Whiting
Note: While we take great care to remove all bones, we cannot guarantee that they are all gone.
Whole Oven Ready Fish:
Hand prepared in house fish is gutted and scaled, ready for cooking in the oven, BBQ or pan. Fish stays super juicy when cooked on the bone.
