John Dory, or St Peter Fish, may be rather strange looking, but it’s highly valued for its mild, slightly sweet flavour, pearly-white flesh and firm, succulent texture. It’s a heavy-boned fish, and a little more expensive because of its low yield, but well every penny. You can also try it with spice and robust herbs, but all that’s really needed with pan-fried fillets is a drizzle of olive oil or a knob of butter and squeeze of lemon juice.

One whole John Dory (approximately between 300g to 500g) provides two good sized portions  – the perfect size to serve up to two people as a main meal or four people as a starter.

Fish Preparation Guide

Fresh Fish Filleted:
Fillets are the most commonly used cut. The fish is taken off the bone to create a fillet which is then pin-boned. Fillets cut from larger fish can subsequently be cut into portions also known as Supremes.

Types of Fish: Cod Brill, Dabs, Dover sole, Gurnards, Herring, Lemon Sole, Megrim Sole, Monkfish, Plaice, Pollock, Rainbow, Trout, Salmon, Sardines, Sea Bass and Whiting

Note: While we take great care to remove all bones, we cannot guarantee that they are all gone.

Whole Oven Ready Fish:
Hand prepared in house fish is gutted and scaled, ready for cooking in the oven, BBQ or pan. Fish stays super juicy when cooked on the bone.

Cooking & Storage

John Dory is a versatile fish that can be pan-fried, grilled, roasted, steamed, or poached, but don't overcook it or it will dry out. Its creamy, white flesh has a dense texture, similar to that of Dover sole, and it can withstand strong flavours. The head and bones of the fish make an excellent fish stock. Combine John Dory with other sea flavours, such as fresh shellfish. A whole John Dory roasted with sea salt, oil, lemon, and a few sprigs of thyme in the oven is a show-stopper.

It's best to eat it right away. Refrigerate between 0°C and 5°C and consume within 2-3 days. If you won't be able to eat it within three days, freeze it on the day of delivery and eat it within three months. Refrigerate overnight to defrost. Do not refreeze.
