We take a first selection of the catch, ensuring that we always have the tastiest scallops available. For your convenience, these King Scallops are sent ready-shucked from their shells and frozen.


Our roe on scallop meat comes from larger species known as King Scallops, which are collected in Scotland or Cornwall. If you leave scallop meat in water after it has been freshly taken from the shell, it will progressively absorb the water and grow in weight. We only buy 'dry' scallops, which are fairly wet but not saturated. Searing our roe on scallops in a hot griddle pan or skillet with garlicky butter is one of our favourite ways to eat it.

Occasionally, due to a variety of causes such as weather conditions, seasonality, or limited supply, some items may be substituted with an equal-value alternative or refunded.

Storage Instructions Best eaten immediately. Store in the fridge between 0ºC-5ºC, and eat within 2-3 days. If you don’t plan to eat within 3 days, then freeze on day of delivery and eat within 3 months. Defrost in the fridge overnight. Do not refreeze.
